Under the watchful eye of The Dalmore's Master Distiller, this Highland single malt begins its maturation in American white oak ex-Bourbon casks, developing the distillery's signature notes of chocolate, orange and spice. It is then finished in casks that held a bespoke Sherry blend of aged Oloroso and rich Pedro Ximénez, crafted specifically to complement the house style. The result is a richly layered whisky, bursting with sweet fruit and decadent spice.

The Dalmore 12 is a Highland Single Malt shaped by careful maturation in American white oak ex-Bourbon casks, followed by a finish in rare, aged Oloroso Sherry casks. The Dalmore 15 year old was first launched in 2007. Matured in three styles of Sherry cask- Matusalem, Apostoles and Amorosa it develops a rich, chocolaty profile layered with dried fruit, winter spice, orange zest, vanilla and toffee. In Scots, a "Deacon" is an adept and proficient master tradesman. The Deacon stands as an homage to craftsmanship in all its forms. Created by expert distillers, it brings together single malts from Islay and Speyside, uniting peaty coastal smoke with a softer, bonfire-like mainland character. On the nose, notes of charred orange, sweet malty biscuits, and woodsmoke emerge, followed by juicy orange, delicate spice, and tangy peat on the palate, finishing long, smooth, and gently sweet with lingering smoke. Distilled in traditional copper pot stills, whose glow inspires the whisky's striking, ornate bottle stamped with its iconic mascot, The Deacon presents an unconventional yet balanced expression.
