A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

In the glass, it reveals a deep, dense black core with a vibrant red hue. Aromas of violets, spice, ripe blueberries, and boysenberry are layered with hints of mocha oak. The palate is rich, round, and textural, delivering juicy flavours of ripe raspberries, satsuma plums, and red currants, supported by fine cocoa-powder tannins for a soft, mouth-filling finish.

Pepperjack Mid strikes a balance between the art of traditional winemaking that Pepperjack is renowned for, and the science of cutting-edge de-alcoholisation and flavour retention technology. Still bursting with quintessential Pepperjack character, this mid-strength wine displays aromas of blackberries and plums with hints of pepper and spice. The palate is rich, round, and soft with concentrated berry fruits and soft velvety tannins.

Enticing aromatics of hazelnut, nutmeg, pear and white peach compliment an elegant and soft palate with fine texture and layers of grapefruit zest, ginger spice and Central Otago stonefruit. Peregrine's organic Pinot Gris is dry in style showing lovely ripe fruit and a subtle texture from a small portion of barrel fermentation. The cooler climate of Central Otago allows Peregrine to maintain a refreshing acidity and great length on the palate.
